Bread bhuji is a quick fix breakfast recipe for those week days when I wake up late in the morning, or haven't planned for breakfast the night before. A dish prepared with minimal ingredients in just no time and yet tasty and light to start your day off.

- 100gm cabbage chopped
- 1 green chili chopped
- 6 slices of bread (I use stale whole meal bread resting in my fridge for days)
- 1/4 tsp of turmeric powder
- 1/2 tsp chili powder
- 1/2 cup curd/ yogurt
- 1/2 tsp mustard seeds
- 1 tbsp of oil
- salt to taste
Method
- Cut bread slices into small squares. I generally make 12 squares from 1 slice of bread.
- Take curd in a big bowl. Add salt, chili powder, turmeric powder and 1/2 cup of water to it and whisk well.
- Add cut bread slices and mix gently so that all the bread pieces get coated with curd mixture lightly.
- Now heat a pan/ wok. Add 1 tbsp of oil.
- When oil is hot add mustard seeds. let them crackle.
- Add cabbage and green chilies. Stir fry until cabbage turns translucent.
- Now add curd coated bread pieces into it and mix gently. Let it cook on low heat for 2-3 mins stirring occasionally. All the moisture will be absorbed and pieces will start to turn golden. Turn off the heat.
- Sprinkle some bhujia on top and serve hot.
