Kadai Paneer is one of the most flavorful paneer curries. Fresh roasted spices are key to its perfect taste. This quick and easy to cook hot curry can be served with any Indian bread.

- 2 dry red chilies
- 1 tsp of cumin seeds
- 2 tsp of coriander seeds
- 6-8 black peppercorns
- 1 tbsp of dry kasoori methi/ fenugreek leaves
- 100gm cabbage cut length wise
- 2 big tomatoes grated
- 1 big capsicum cut into thin strips
- 1 inch piece of ginger grated
- salt to taste
- 1 tbsp of oil
- 200 gms of paneer cut into pieces
Method
- Dry roast chilies, cumin, coriander and peppercorns until fragrant. Let them cool.
- Ground them coarsely and keep aside.
- Heat oil in a kadai/ wok.
- Add cabbage and saute till they turn a little tender.
- Add ginger, tomatoes and capsicum. Saute for 2 more minutes.
- Add salt and mix in again.
- Add paneer and ground spices. Cover and let it cook on low heat for 2 mins.
- Dry roast kasoori methi until fragrant. Be careful as it takes only seconds.
- Crush it with your hand and sprinkle on top.
- Serve hot with your choice of bread.
