Cauliflower is often a well adored vegetable in every household. This recipe adds the flavors of pickle to the regular cauliflower. This recipe goes really well with any of the Indian breads.

- 1 Cauliflower cut into small florets
- 2 potatoes peeled and diced.
- few green chilies
- 1 inch of ginger grated
- a pinch of asafoetida
- 1 tsp nigella seeds
- 1/2 tsp fenugreek seeds
- 1/2 tsp cumin seeds
- 1/2 tsp mustard seeds
- 11/2 tsp of fennel seeds ground
- 1/2 tsp of mustard seeds ground
- 1/2 tsp red chili powder
- 1/2 tsp turmeric powder
- 2 tbsp of coriander powder
- 1/2 tsp of garam masala powder
- dry fenugreek leaves
- salt to taste
- 3 tbsp oil.
Method
- Heat oil in a wok/Kadhai. Add cauliflower and stir fry until soft. Take out and keep aside.
- Now add potatoes to remaining oil and stir fry until soft. Take them out as well and keep aside.
- Now to remaining oil (add some if nothing is left), add all the spices except salt, garam masala and fenugreek leaves. Add ginger and green chilies. Mix well.
- Add cauliflower and potatoes. Sprinkle salt salt and mix. Cover and let it cook for 4-5 mins, or until veggies are completely done.
- Sprinkle fenugreek leaves and garam masala and mix well. Switch off the stove and cover again for 2-3 mins. The aroma and flavors will be absorbed by the vegetables.
- Serve with your choice of bread.
