Everyone is fond of cakes. But if the cake comes packed with nutrition, its a bliss! So here is a recipe for guilt free cake.
Eggless wholemeal banana bread is a moist cake with little crunch. It is highly flavorful and addictive :)
Ingredients
- 2 cup wholemeal self raising flour
- 1 cup crushed walnuts
- 1 tsp baking soda
- 2 tbsp flax seed powder
- a pinch of salt
- 3-4 mashed bananas
- 2/3 cup sugar
- 1/4 cup milk.
- 1/4 cup olive oil
- 1 tsp vanilla essence.
Method
- Preheat oven to 180°C.
- Mix together dry ingredients i.e. flour, walnuts, baking soda, flax seed powder and salt. Keep aside.
- In a bowl mix bananas, sugar, milk, oil and vanilla essence.
- Now add dry ingredients to the bowl and give a gentle mix so that all ingredients come together. Don't over mix. It will spoil the texture of the cake.
- Pour the batter in a greased cake/bread tin. Flatten it with a spoon.
- Bake for 40-50 mins. Insert a toothpick in middle, if it comes out clean its done.
- Let it cool for 5-10 mins before cutting into slices.
