Achari Gobhi/ Cauliflower

Cauliflower is often a well adored vegetable in every household. This recipe adds the flavors of pickle to the regular cauliflower. This recipe goes really well with any of the Indian breads.

Achari Gobhi Gobi


Ingredients
  • 1 Cauliflower cut into small florets
  • 2 potatoes peeled and diced.
  • few green chilies
  • 1 inch of ginger grated
  • a pinch of asafoetida
  • 1 tsp nigella seeds
  • 1/2 tsp fenugreek seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 11/2 tsp of fennel seeds ground
  • 1/2 tsp of mustard seeds ground
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 2 tbsp of coriander powder
  • 1/2 tsp of garam masala powder
  • dry fenugreek leaves
  • salt to taste
  • 3 tbsp oil.
Method
  1. Heat oil in a wok/Kadhai. Add cauliflower and stir fry until soft. Take out and keep aside.
  2. Now add potatoes to remaining oil and stir fry until soft. Take them out as well and keep aside.
  3. Now to remaining oil (add some if nothing is left), add all the spices except salt, garam masala and fenugreek leaves. Add ginger and green chilies. Mix well. 
  4. Add cauliflower and potatoes. Sprinkle salt salt and mix. Cover and let it cook for 4-5 mins, or until veggies are completely done.
  5. Sprinkle fenugreek leaves and garam masala and mix well. Switch off the stove and cover again for 2-3 mins. The aroma and flavors will be absorbed by the vegetables.
  6. Serve with your choice of bread.
