Kuttu Chila/ Savory Buckwheat Pancakes

Kuttu or Buckwheat flour is very commonly used in India during fasting or say vrats. But most of the vrat recipes need a good amount of oil for making. After a whole day of fasting, I really don't prefer something very heavy and so comes these pan cakes in picture. They are very light, easy to make and don't need much time to prepare. Though they require a significant amount of time in cooking if catering a big crowd.

Another appreciable thing about this recipe is the fact that its totally gluten free.

Buckwheat Pancake

Ingredients
  • 1 medium sized potato peeled and grated (approx 3/4 cup)
  • 1/4 cup singoda/ singada / water chestnut flour
  • 1/2 cup kuttu / buckwheat flour
  • salt to taste
  • 1-2 chopped green chilies
  • 2 tbsp chopped corriander
  • 3/4 cup water
  • oil as per needed.
Method
  1. Mix all the ingredients above except oil to make a batter. The resulting batter should not be very thick nor very flowing.
  2. Heat a skillet or a pan. Grease it.
  3. When it is hot enough, reduce the heat to minimum.
  4. Now pour approximately 2 ladles of batter in the center, and spread it outwards using the back side of the ladle, to form approximately 8 inch diameter circle.
  5. Let it cook on low heat until the top side of it turns dry.  Drizzle few drop of oil on it.
  6. Now carefully flip it and cook it on high for few mins. You can flip again and cook until it gets a little crisp.
  7. Serve hot with yogurt.
