Bread Bhuji

Bread bhuji is a quick fix breakfast recipe for those week days when I wake up late in the morning, or haven't planned for breakfast the night before. A dish prepared with minimal ingredients in just no time and yet tasty and light to start your day off.

Bread Bhuji Bhurji


Ingredients
  • 100gm cabbage chopped
  • 1 green chili chopped
  • 6 slices of bread (I use stale whole meal bread resting in my fridge for days)
  • 1/4 tsp of turmeric powder
  • 1/2 tsp chili powder
  • 1/2 cup curd/ yogurt
  • 1/2 tsp mustard seeds
  • 1 tbsp of oil
  • salt to taste
Method
  1. Cut bread slices into small squares. I generally make 12 squares from 1 slice of bread.
  2. Take curd in a big bowl. Add salt, chili powder, turmeric powder and 1/2 cup of water to it and whisk well.
  3. Add cut bread slices and mix gently so that all the bread pieces get coated with curd mixture lightly.
  4. Now heat a pan/ wok. Add 1 tbsp of oil.
  5. When oil is hot add mustard seeds. let them crackle.
  6. Add cabbage and green chilies. Stir fry until cabbage turns translucent.
  7. Now add curd coated bread pieces into it and mix gently. Let it cook on low heat for 2-3 mins stirring occasionally. All the moisture will be absorbed and pieces will start to turn golden. Turn off the heat.
  8. Sprinkle some bhujia on top and serve hot.
