Aloo Tamatar ki Sabzi/ Potato Tomato Gravy

This is a very common recipe in every Indian household with a little bit of my personal touch to it. This is one recipe that is enjoyed from small kids to eldest in the family and is super easy and quick to make.

This gravy goes well with any of the Indian breads, but I particularly like it with Indian fried breads, like poori, kachori and bedmis....the list goes on....:)

Potato in tomato gravy


Ingredients
  • 4 medium sized potatoes
  • 2 large tomatoes grated/ pureed
  • 2-3 green chilies
  • 1tbsp ghee/ clarified butter
  • 1 tsp cumin seeds
  • few bay leaves
  • 1 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 tbsp coriander powder
  • 1/2 tsp garam masala powder
  • salt to taste
  • chopped coriander for garnish
Method

  1. Boil potatoes till they are very soft. Let them cool and then peel them off.
  2. Take 2 cups of water in a bowl and crush potatoes with your hand in it. It will give you unequal sized pieces of potatoes and a small portion of potatoes that will be totally dissolved in water. Keep aside.
  3. Now heat ghee in a sauce pot/ pan. When hot add cumin seeds and bay leaves, let them crackle. 
  4. Add tomatoes, green chilies and stir for a minute.
  5. Add turmeric powder, chili powder, coriander powder and stir for 1 more minute.
  6. Add crushed potatoes with water. Add more water if required to adjust the consistency of gravy. 
  7. Add salt. Cover and let it cook on high until it boils and then on low for 8-10 mins.
  8. Add garam masala powder.
  9. Garnish with chopped coriander and serve hot.
